首先要介紹下呢個莊!! Champagne H. Billiot Fils 係位於 Ambonnay - Grand Cru Village！ Laetitia Billiot 係酒莊第四代。Laetitia嘅曾祖父Louis Billiot釀造過少量葡萄酒，而 Laetitia 的父親 Serge 係 1954 年接手公司，係 Ambonnay生產出一系列香檳。到依家Laetitia繼續傳承，經營緊5公頃酒莊。
而Ambonnay 位於黑丘 (Côte des Noirs) 的中心地帶，蘭斯山的斜坡。山丘因盛產 Pinot Noir & Chardonnay 而聞名!!! 不得不提Laetitia關注香檳品質嘅同時對保護環境都好注重(plowing, reasoned wrestling, trimming the Chablis method, etc.)
Billiot經營的嘅18 個地塊，全部都係面向南方，係村莊中最理想嘅地段。 而Laetitia釀造嘅香檳從未經過MLF或過濾，所以Billiot 嘅香檳，風味更加原始豐富。
現時Billiot 嘅年產量只得32000支，因為莊主希望保持每支香檳嘅質素。所以每支都非常難得。另外﹐Champagne H. Billiot Fils 仲會按訂單除渣，因此每批裝瓶的除渣日期都是不同的。真係好有heart去造！
